  • Strawberry
  • 1 cup no sugar added strawberry lemonade (uncle matt’s organic brand is great)
  • 1 tbsp honey 
  • 2 tbsp grass fed gelatin mixed into 1/4 cup no sugar added lemonade (uncle matts organic) or white grape juice
  • Pineapple
  • 1 cup pineapple juice (canned or heated so enzymes are inactive)
  • 2 tbsp grass fed gelatin mixed into 1/4 cup lemonade 
  • Blue Lemonade
  • 1 cup lemonade 
  • 1 tbsp honey 
  • 2 tbsp grass fed beef gelatin mixed into 1/4 cup lemonade
  • 1 tsp blue spirulina- dissolved fully in a splash of lemonade before adding 
  • Grape
  • 1 cup white grape juice or lemonade
  • 1-2 tbsp concord grape juice (enough to bring out a purple hue)
  • 1 tbsp honey or pure maple syrup 
  • 2 tbsp grass fed gelatin mixed into 1/4 cup white grape juice or lemonade 

Process

  • Prepare a 9×13 baking dish
  • Spray lightly with coconut oil spray, and line the bottom and two long sides with parchment paper
  • Smooth the parchment paper as best as you can
  • For each layer-
  • In a small bowl whisk 1/4 cup juice with your 2 tbsp grass fed gelatin. After a few minutes it will thicken into a gelatin bloom
  • Heat 1 cup of juice and sweetener (if using) on stove top until warm
  • Once warm, add your gelatin bloom and whisk until fully dissolved
  • Pour your strawberry layer into your prepared baking dish and allow to set in the fridge about 20 minutes
  • It doesn’t need to be fully set between layers. You want it bouncy, and your finger not to go right through
  • Prepare your next layer while your previous layer sets
  • Once the gelatin bloom is dissolved, set it aside off of the heat to allow it to cool at leas 5 minutes, while your previous layer finishes setting as well
  • Once you pour your 4th layer on top you want to let the full dish set for 30 minutes
  • Spray your knife lightly with non stick spray to slice into strips (which are super fun and wiggly) or slice further into squares
  • Store in an airtight container in the fridge for up to 6 days
