Why You’ll Love These Homemade Strawberry Protein Marshmallows
- They texture is fun and squishy!
- They are incredible to use in fall s’mores around the campfire
- They’re gluten free, refined sugar free, and completely dairy free
- They’re sweetened with honey, which is lower glycemic index than white table sugar
- They taste even better than a store bought marshmallow!
Key Ingredients
- Grass fed beef gelatin – helps give the gooey texture! Not the same as those individual Knox packets. I prefer this brand of high quality beef gelatin HERE
- Honey – the gooeyness helps you achieve the squishy texture
- Organic Raw Sugar – sugar is one of the top 5 GMO crops. For this reason I opt for organic sugar, to avoid the glyphosate and pesticide exposure
- I have since made these marshmallows multiple times, and have found they will work with just 1 cup of honey as well (in place of all sweeteners)
- Strawberry Protein Powder – adds protein and flavor to these! My favorite clean ingredient brand is Just Ingredients 100% grass fed whey, with no gums or artificial flavors / sweeteners. Code colleenF10 saves you site wide!

Process
- Combine gelatin and 1/2 cup water in a large mixing bowl
- In a pot combine remaining 1/2 cup water, honey, and sugar
- Note I have made this recipe again and used just 1 cup of honey total (no cane sugar) and it also worked out!
- Heat on stove top, stirring regularly to keep from sticking to the bottom. Cook until you reach a temp btwn 238-230 degrees F (5-8min for me on medium heat)
- Once that’s reached, pour into mixing bowl with your gelatin bloom
- Use a stand or hand mixer and whip for 5-8 minutes, until you get a gooey consistency
- Add in strawberry protein powder and whip another minute until goooey
- Pour into 8×8 dish and refrigerate 1 hour
- Slice into squares and coat in arrowroot to keep from sticking


I love how easy it to just add all of the filling ingredients to a stand mixer and watch it fluff up into that irresistible gooey texture!
Variations for Dietary Preferences
- Organic sugar – you can make these with just 1 cup of honey in place of the honey & sugar
- Arrowroot starch – is flavorless but helps coat the marshmallows so they don’t stick together. You can also use organic powdered sugar, corn starch, or tapioca starch
- Strawberry Protein Powder – you can use 3 tbsp freeze dried strawberry powder instead. You can also use vanilla protein or the protein flavor of your choice instead of strawberry
I used to be intimidated by homemade marshmallows, but they really are soo much easier than you’d think!
