Strawberry Protein Marshmallows

Ingredients

  • 1 cup Water Divided
  • 2 Tbsp Grass-Fed Gelatin
  • 1/2 cup Honey
  • 1/2 cup Granular Monkfruit Sweetener with Allulose - Lakanto, Or organic cane sugar
  • 2 scoops Strawberry Protein Powder
  • 2 Tbsp Arrowroot Flour For coating
  • 1 Pinch Pink Colorant all natural, optional, for deeper pink

Instructions

  • Combine gelatin and 1/2 cup water in a large mixing bowl
  • In a pot combine remaining 1/2 cup water, honey, and sugar
  • Heat on stove top, stirring regularly to keep from sticking to the bottom. Cook until you reach a temp btwn 238-230 degrees F (5-8min for me on medium heat)
  • Once that's reached, pour into mixing bowl with your gelatin bloom
  • Use a stand or hand mixer and whip for 5-8 minutes, until you get a gooey consistency
  • Add in strawberry protein powder and whip another minute until goooey
  • Pour into 8x8 dish and refrigerate 1 hour
  • Slice into squares and coat in arrowroot to keep from sticking
