Copycat Oatmeal Cream Pies

Move over Little Debbie’s!

These cleaned up copycat oatmeal cream pies are gluten free, have no refined sugar, and have a boost of protein, too!

The gooey inside is to die for! I used my homemade marshmallow fluff, but you can also melt my homemade protein marshmallows for the center, too!

Serves: 6

Ingredients

  • 3/4 cup Gluten-Free Flour
  • 1/2 cup Vanilla Protein Powder
  • 1/2 cup Gluten-Free Rolled Oats
  • 1/4 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/2 tsp Cinnamon, Ground
  • 2/3 cup Coconut Sugar
  • 2 Tbsp Flaxseed Meal
  • 1 Tbsp Molasses
  • 1 whole Egg
  • 3 Tbsp Almond Butter
  • 3 Tbsp Banana, Mashed
  • 1 tsp Pure Vanilla Extract
  • 1 whole Homemade Marshmallow Fluff (click for recipe), OR my protein marshmallows**

Process

  1. Whisk dry ingredients together
  2. Mix wet ingredients and combine
  3. Use a cookie scoop sprayed with nonstick spray to scoop out 12 cookies
  4. Flatten with a spatula
  5. Bake at 350 for 8 min
  6. Cool for a few min then move to cooling rack
  7. Once cooled, pipe homemade marshmallow fluff onto half the cookies, OR melt your protein marshmallows for just a few seconds until gooey and pipe those, then top with remaining cookies
  8. Enjoy!!

Notes

* if using protein marshmallows warm the marshmallows for just a few seconds, let cool 30-60 seconds, place in piping bag and pipe onto center of cookies right away *my protein marshmallows are on my Instagram page and Foodsocial page too if you search “protein marshmallows” ** I used my favorite high quality protein from just ingredients brand.
