Pencil Cake Pops

These adorable pencil cake pops are dye free, gluten free, dairy free and have a protein boost, too! They’re completely no bake and are as delicious as they are cute!
These make for a fun after school snack, or a fun snack to make with the kiddos the week leading up to school, getting everyone excited for the new season to come!

Serves: 6
Ingredients
- 1/4 cup Cashew Butter
- 1/4 cup Vanilla Protein Powder
- 3 Tbsp Coconut Flour
- 1/4 cup Pure Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/2 cup White Chocolate
- 1 pinch Dye-Free Yellow Food Color – ( I like Color Kitchen Foods brand)
- 6 whole Waffle Cones (I like Sprouts brand coconut based cones)
- 1 pinch Dye-Free Pink Sanding Sugar

Process
- Combine dough ingredients then roll into 6 balls
- Melt a little bit of dark chocolate to dip the ends of your waffle cones in them
- Melt your white chocolate, divide in half, add your yellow, then dip the tops of your cones into the yellow
- Place your cake ball onto the top of your cone, pressing against the yellow chocolate, as it will hold it in place once chocolate hardens
- Dip the cake ball into white chocolate then place naturally colored pink sugar crystals on top and place in the fridge until chocolate has hardened, and enjoy!

Notes
I used gluten free waffles cones, pascha brand white chocolate and dark chocolate to keep it dairy free, and used natural yellow colorant and natural pink sugar crystals adjust to your dietary preferences!
