Why You’ll Love These Strawberry Sugar Cookie Truffles
- They’re

Ingredients
- 1/4 cup Vanilla Bean Ghee – 4th & Heart – brings out the best sugar cookie flavor! Can use plain ghee with vanilla paste also
- 1/4 cup Pure Maple Syrup
- 1/4 cup Cashew Butter – can also use vanilla oat butter (like oat haus brand) or sun butter
- 1/4 cup Strawberry Protein Powder – Just ingredients is my fave clean ingredient brand. The strawberries and cream protein taste delicious! Use code colleenF10 to save!
- 1 cup Almond Flour
- 2 Tbsp Freeze-Dried Strawberries
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Almond Extract
- 1/2 cup Organic Vegan White Baking Chips – Pascha Chocolate Co.

Process
- Process freeze dried strawberries until fine
- Combine all the dough ingredients together until smooth
- The vanilla ghee add to the distinct sugar cookie taste here, but plain ghee or coconut oil will also work
- Fold in sprinkles if you’d like in the cookie dough as well
- Refrigerate dough for 30 min
- Roll into balls. I used a 2tbsp cookie scoop
- Dip in melted white chocolate, drip of excess, place on parchment paper, and top with natural sprinkles (go super natural brand here)
- Place in the fridge 15min until white chocolate has hardened, then enjoy!
- Store in the fridge

I love how easy it to just add all of the filling ingredients to a bowl, mix, and refrigerate!
Variations for Dietary Preferences
- Strawberry protein powder – you can also use vanilla protein and up the freeze dried strawberry powder to 3 tbsp
- You can use a 100% grass fed whey
- Or a delicious, dairy free, and nourishing French Vanilla bone broth protein
- If you’d like to keep them vegan try my favorite Plant Based Vanilla Protein Powder
- Vanilla bean ghee – really brings out that sugar cookie flavor, but plain ghee or softened coconut oil can also be used
- Almond flour – oat flour can be used as well. Start with 1-2 tbsp less, as it is a tad drier than almond flour
- Cashew butter – can use vanilla oat butter (oathaus brand) or sun butter for nut free
