The Grinch Rice Pudding

The The Grinch Rice Pudding or sugar cookie flavored rice pudding is nourishing and as pretty as it looks, is made with no artificial dyes!

Rice pudding was a holiday staple for me growing up, and this colorful and festive flavor makes it even more nostalgic!

Why You’ll Love The Grinch Rice Pudding

  • It’s gluten free, sweetened without refined sugar, and naturally colored
  • It’s made with nourishing ingredients
  • It can easily be made in bulk to bring to the holiday festivities

Ingredients

  • 4 cups whole milk
  • 1 cup @riceselect Arborio rice 
  • 2 tbsp vanilla bean ghee 
  • 1/3 cup granular monkfruit sweetener, or granular sweetener of choice 
  • 1 tsp vanilla extract 
  • Pinch of sea salt 
  • Pinch of all natural green colorant dissolved in water (totaling about 1 tbsp liquid) – can use matcha powder or an artificial dye-free brand 

Process

  • Combine rice, maple sugar, and sea salt in a medium sauce pan
  • Add in milk, ghee, green colorant, and vanilla extract
  • Cover the pot with a lid and bring the mixture to a boil.
  • Once it reaches a boil, reduce the heat to low-medium, remove the lid. Let it simmer uncovered for 25 to 35 minutes, stirring often to prevent sticking, until the rice is fully cooked and the pudding thickens.
  • Scoop the rice pudding into individual ramekins or bowls and let it cool at room temperature. The pudding will continue to thicken as it cools.
  • You can enjoy warm, or refrigerate for even more thickness and a dense, thick texture
  • Top with a dollop of Greek yogurt and an iconic strawberry heart and enjoy!
  • If desired, you can thin the pudding with a bit of milk before serving

I love how easy it to just add all of the ingredients to a pot, mix, and simmer!

Variations for Dietary Preferences

  • Vanilla bean ghee – this really brings out that sugar cookie flavor!! You can also use plain ghee or butter, but up the vanilla paste
  • Vanilla paste – has a more potent flavor profile that vanilla extract. If you don’t have it, use 2 tsp vanilla extract
  • Granular monkfruit – feel free to use organic cane sugar or coconut sugar (may be a tad darker in color)
  • Feel free to omit the colorant and just top with dye-free sprinkles for a sugar cookie rice pudding
  • You can always add more milk (or a bit more ghee) to make it even creamier. The longer it sits the more liquid the rice will absorb
