The Grinch Rice Pudding

Sugar cookie flavored and festive rice pudding! Gluten free, refined sugar free, and artificial dye-free!

Ingredients

  • 4 cups whole milk
  • 1 cup Arborio rice
  • 2 tbsp vanilla bean ghee
  • 1/3 cup granular monkfruit sweetener or granular sweetener of choice
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Pinch of all natural green colorant dissolved in water totaling about 1 tbsp liquid - can use matcha powder or an artificial dye-free brand

Instructions

  • Combine rice, maple sugar, and sea salt in a medium sauce pan
  • Add in milk, ghee, green colorant, and vanilla extract
  • Cover the pot with a lid and bring the mixture to a boil.
  • Once it reaches a boil, reduce the heat to low-medium, remove the lid. Let it simmer uncovered for 25 to 35 minutes, stirring often to prevent sticking, until the rice is fully cooked and the pudding thickens.
  • Scoop the rice pudding into individual ramekins or bowls and let it cool at room temperature. The pudding will continue to thicken as it cools.
  • You can enjoy warm, or refrigerate for even more thickness and a dense, thick texture
  • Top with a dollop of Greek yogurt and an iconic strawberry heart and enjoy!
  • If desired, you can thin the pudding with a bit of milk before serving
