The Grinch Smoothie

This powerhouse of a smoothie is packed with vegetables, healthy fats, and a big protein boost, too. Topped with homemade protein rich whipped cream, this grinch themed treat is a sure hit to get some veggies into those picky eaters in your life!

Serves: 2
Ingredients
- 1 whole Banana, Frozen
- 1 cup Mango
- 1/2 cup Plain Greek Yogurt
- 1 1/2 cups Baby Spinach
- 1/3 cup Avocado
- 1/2 cup Almond Milk
- 1 whole Vanilla Protein Powder, 1 heaping scoop
- 1 Tbsp Pure Maple Syrup, *
- 3/4 cup Heavy Whipping Cream
- 1/4 cup Powdered Monkfruit Sweetener – Lakanto, Or organic powdered sugar *
- 1/4 cup Vanilla Protein Powder
- 1/2 tsp Pure Vanilla Extract
- 1 Tbsp Arrowroot Flour, *
Process
- For whipped topping- chill a mixing bowl, then add in heavy cream, protein powder, powdered sugar, and vanilla. If using powdered sugar substitute add the arrowroot.
- Using a hand or stand mixer mix together until whipped up ~6-7 min
- If using a hand mixer take a break halfway and place bowl in the freezer for a few to chill again
- Once whipped, place in a piping bag (you will have extra)
- Optional- line the rim of your glass with whipped cream and roll in natural sprinkles (I used go super natural brand)
- Blend all smoothie ingredients together until smooth. The riper your banana the sweeter it will be. If it’s not sweet enough add some honey or pure maple syrup
- then pour into your rimmed glass, top with whipped topping, and enjoy!
