The Grinch Smoothie

This powerhouse of a smoothie is packed with vegetables, healthy fats, and a big protein boost, too. Topped with homemade protein rich whipped cream, this grinch themed treat is a sure hit to get some veggies into those picky eaters in your life!

Ingredients

  • 1 whole Banana Frozen
  • 1 cup Mango
  • 1/2 cup Plain Greek Yogurt
  • 1 1/2 cups Baby Spinach
  • 1/3 cup Avocado
  • 1/2 cup Almond Milk
  • 1 whole Vanilla Protein Powder 1 heaping scoop
  • 1 Tbsp Pure Maple Syrup *
  • Protein whipped cream
  • 3/4 cup Heavy Whipping Cream
  • 1/4 cup Powdered Monkfruit Sweetener - Lakanto Or organic powdered sugar *
  • 1/4 cup Vanilla Protein Powder
  • 1/2 tsp Pure Vanilla Extract
  • 1 Tbsp Arrowroot Flour *

Instructions

  • For whipped topping- chill a mixing bowl, then add in heavy cream, protein powder, powdered sugar, and vanilla. If using powdered sugar substitute add the arrowroot.
  • Using a hand or stand mixer mix together until whipped up ~6-7 min
  • If using a hand mixer take a break halfway and place bowl in the freezer for a few to chill again
  • Once whipped, place in a piping bag (you will have extra)
  • Optional- line the rim of your glass with whipped cream and roll in natural sprinkles (I used go super natural brand)
  • Blend all smoothie ingredients together until smooth. The riper your banana the sweeter it will be. If it's not sweet enough add some honey or pure maple syrup
  • then pour into your rimmed glass, top with whipped topping, and enjoy!
