Thick and Fluffy Cottage Cheese Pancakes

Gluten free, no refined sugar, and just as thick and fluffy as your restaurant favorite, but with a protein boost, too!

Serves: 4

Ingredients

  • 1/2 cup Cottage Cheese
  • 2 whole Eggs
  • 3 Tbsp Almond Milk
  • 1 Tbsp Pure Maple Syrup
  • 1 Tbsp Butter, Unsalted, Melted
  • 3/4 cup Gluten-Free Flour
  • 1/4 cup Vanilla Protein Powder
  • 1 1/2 tsp Baking Powder
  • 2 Tbsp Mini Chocolate Chips, Semi-Sweet

Process

  1. Blend wet ingredients together
  2. Whisk flour & baking powder, then add in wet ingredients and combine
  3. Fold in sprinkles, chocolate chips, or add ins of choice
  4. Add to preheated skillet and cook a few minutes per side
  5. Enjoy!

Notes

This makes 4 large thick pancakes. You can make them smaller or double the batch! They freeze well too
