Turtle Pecan Protein Mousse

This Turtle Pecan Protein Mousse is packed with protein, it’s gluten free, and free from refined sugars.

It’s made with a thick and creamy cottage cheese mousse (no, you can NOT taste the cottage cheese!!), a homemade caramel sauce, homemade chocolate sauce, and chopped pecans to top

It is simply irresistible, and you’d never know it was actually good for you!

Ingredients

  • 20 oz cottage cheese 
  • 1/4 cup almond butter 
  • 3 tbsp pure maple syrup 
  • 1/3 cup vanilla protein powder  – use code colleenF10 to save
  • A few drops of English toffee stevia or 1/2 tsp vanilla extract 
  • Caramel sauce 
  • 1/3 cup cashew butter or peanut butter (or half of each for ideal flavor)
  • 2 1/2 tbsp pure maple syrup 
  • 2 tbsp melted coconut oil 
  • 1/1 tsp vanilla extract 
  • Chocolate sauce 
  • 6 tbsp oat milk (try 4 tbsp almond milk)
  • 6 tbsp pure maple syrup 
  • 1/2 cup cocoa powder 
  • 1 tsp vanilla extract 

Process

  • Whisk chocolate sauce ingredients together in a small sauce pan. Bring to a simmer, and cook over low heat for 2 more minutes 
  • Can enjoy warm, or store in an airtight container in the fridge and enjoy thick when cold 
  • -whisk caramel sauce ingredients together until smooth 
  • -blend or process all mousse ingredients together 
  • Pour into jars and optionally, layer with caramel & chocolate sauce in the center, and top for with more mousse 
  • Refrigerate at least 2 hours (overnight is ideal)
  • When ready to enjoy top with pecans, more chocolate & caramel sauce, and enjoy!

I love how easy it to just add all of the filling ingredients to a blender, mix, and pour!

Bonus: You’ll have leftover caramel and chocolate sauce to use for other desserts, coffee, topping your protein ice cream, or more protein mousse!

Variations for Dietary Preferences

  • Cottage Cheese– can also use Greek yogurt here, or keep it vegan with a dairy free Greek style yogurt (I like Kite Hill brand) and my favorite vegan vanilla protein powder (code COLLEEN saves 30%)
  • English Toffee Stevia – adds to that turtle taste, but you can also just use 1/2 tsp vanilla extract in place
  • Almond Butter – feel free to use another nut butter, or sunbutter. You can even leave it out if need be, it will just be a tad bit thinner
  • Pure Maple Syrup – sub sugar free syrup, date syrup, or honey
  • Oat Milk – I’ve found is nice and creamy for the consistency of chocolate sauce. Can sub coconut milk shaken from a can. I don’t recommend almond milk as it’s more watery
