Vegan Chocolate Chip Cookies
These Vegan Chocolate Chip Cookies are so soft and chewy!
No one would ever guess they’re gluten free and completely vegan! And yes, those are artificial dye-free chocolate gems on top, too!

Serves: 12
Ingredients
- 1 3/4 cup Gluten-Free Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 pinch Sea Salt
- 1/3 cup Classic Monkfruit Sweetener (with Allulose) – Lakanto, Or organic cane sugar
- 1/2 cup Brown Monkfruit Sweetener – Lakanto, Or brown sugar. +2tbsp
- 1/3 cup Avocado Oil, +2tbsp
- 1/4 cup Almond Milk
- 1/2 cup 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips with Organic Stevia – Pascha Chocolate Co.
- 1 tsp Vanilla Extract


Process
- Whisk dry ingredients together in one bowl
- Whisk wet ingredients together in another bowl, then combine the two
- Fold in chocolate chips
- Cover and refrigerate dough for 30min+
- Roll into ~2 tbsp balls, flatten to desired thickness (these won’t spread much), and place naturally colored chocolate gems on top
- Bake at 350 for 10-12 min
- Allow to cool on baking sheet for 5min, then transfer to wire cooling rack until completely cool
- Enjoy!

Notes
Use mix ins of choice! As you can see these are Christmas themed, but feel free to color coordinate for the 4th of July, New Years, Easter, or more chocolate chips for an anytime treat!

Variations for Dietary Preferences
- Sweeteners – feel free to use organic cane sugar and organic brown sugar in place of the sugar substitutes
