Place greek yogurt in a fine mesh strainer or nut milk bag and allow excess liquid to strain out for 2 hours+ (overnight is fine too)
This allows for pipe-able thickness onto the rice cake. It's totally optional for visual appeal / assuring the yogurt doesn't run off the cake. The mixture will taste the same either way
Mix yogurt with vanilla protein powder and sweetener
Slice banana onto coins and layer on rice cakes
Pipe or spoon your yogurt mixture overtop
Drizzle with melted dark chocolate
Top with natural sprinkles, and an optional cherry on top!
