  • cup plain Greek yogurt
  • 2 tbsp avocado‑oil mayo optional but adds creaminess
  • 1 tbsp ranch seasoning Primal Palate or similar
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded mozzarella or Monterey Jack

Toppings

  • Extra buffalo drizzle
  • Ranch drizzle Greek yogurt + ranch seasoning + splash of water
  • Green onions
  • Crumbled feta or blue cheese optional
  • Fresh parsley

Instructions

Prep the Peppers

  • Preheat oven to 400°F.
  • Place pepper halves on a baking sheet, spray lightly with avocado oil, and season with salt + pepper.
  • Bake for 10 minutes to soften slightly.

Make the Buffalo Ranch Chicken

  • Heat a skillet over medium‑high.
  • Add ground chicken and cook until browned.
  • Stir in buffalo sauce, Greek yogurt, mayo, ranch seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
