Carrot Cake Overnight Oats (Gluten‑Free, High‑Protein, Dairy‑Free Option)

Ingredients

  • 1 cup gluten free rolled oats
  • 1 cup milk of choice
  • 1/2 cup plain greek yogurt or vegan yogurt of choice
  • 2 tbsp chia seeds
  • 1 heaping scoop vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup shredded carrots
  • 2 tbsp crushed pecans
  • 2 tbsp raisins

Glaze

  • 2 tbsp cashew butter
  • 1 tbsp melted coconut oil
  • 1 tbsp pure male syrup
  • 1/2 tbsp lemon juice

Instructions

  • Combine your oats ingredients together in a large bowl, and mix well
  • Pour into 3 individual serving jars and refrigerate at least 4 hours, or overnight
  • Make you glaze by whisking everything together
  • When ready to eat drizzle with glaze and optional toppings - more raisins, carrots, and/or pecans
  • Store in the fridge for up to 4 days
