Blend mousse ingredients until smooth, scraping the sides as needed
Pour into individual serving jars and refrigerate at least 3 hours, or overnight for optimal thick texture
Make brownie bites by processing ingredients together until smooth (dough will be sticky; it will firm once refrigerated. If it seems way too sticky your dates may have been extra soft. Add 2 tbsp chocolate protein powder, or more cocoa powder and process again)
Press into small dish lined with parchment paper, sprinkle dye-free gems on top, and refrigerate 20 min
Slice into small chunks
When ready to serve melt your dark chocolate in 30 second intervals until almost smooth, then whisk in pb or coconut cream
Pour overtop mousse and top with brownie chunks!
