Cosmic Brownie Cottage Cheese Mousse (High‑Protein, No‑Bake Dessert!)

Ingredients

  • 20 oz cottage cheese
  • 1/3 cup chocolate protein powder
  • 2 tbsp cocoa powder
  • 3 tbsp almond butter or hazelnut butter for a fudgier taste
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract

Ganache

  • 2 tbsp dark chocolate chips
  • 2 tbsp creamy/runny peanut butter or 3 tbsp coconut cream, just the thick part

No bake brownie bites

Instructions

  • Blend mousse ingredients until smooth, scraping the sides as needed
  • Pour into individual serving jars and refrigerate at least 3 hours, or overnight for optimal thick texture
  • Make brownie bites by processing ingredients together until smooth (dough will be sticky; it will firm once refrigerated. If it seems way too sticky your dates may have been extra soft. Add 2 tbsp chocolate protein powder, or more cocoa powder and process again)
  • Press into small dish lined with parchment paper, sprinkle dye-free gems on top, and refrigerate 20 min
  • Slice into small chunks
  • When ready to serve melt your dark chocolate in 30 second intervals until almost smooth, then whisk in pb or coconut cream
  • Pour overtop mousse and top with brownie chunks!
