Blend all popsicle ingredients, minus sprinkles, until smooth, scraping the sides as needed
Stir in sprinkles
Pour into popsicle molds, place your popsicle stick, and freeze at least 4 hours
Melt chocolate with coconut oil in 30 second intervals, stirring in between until smooth
Line a cutting board with parchment paper
Dip your popsicles in chocolate, allow excess to drip off, and place on parchment paper
Quickly top with more sprinkles, if desired, before chocolate melts
And enjoy!
