Use a hand mixer to whip your cream cheese and cashew butter together until smooth
Add remaining ingredients and whip again
Fold in 1/3 cup mini dark chocolate chips
Place in plastic wrap or beeswax wrap and shape into a sphere, and place in the freezer for 30 min to hold shape
Once firm, remove from wrap, smooth out shape with a spatula, and cover in dark chocolate chips, leaving room for eyes, two white chocolate chips for the teeth, and half a chocolate cookie for each ear!
Serve with gluten free pretzels, graham crackers, apple slices, strawberries, etc
