Easy Breakfast Smash Tacos with Sausage, Egg, and Chipotle Crema

Ingredients

  • 6 small tortillas I used organic sourdough tortillas. Use gluten free if needed
  • 1 lb spicy breakfast sausage I used Pederson Farms sustainably sourced. Feel free to sub ground chicken or turkey
  • 5 eggs scrambled softly

For Topping

  • Fresh Pico
  • Avocado
  • Cilantro

Chipotle Lime Crema

  • 1/2 cup plain greek yogurt
  • 1 chipotle in adobo sauce diced, or 1-2 tbsp adobo sauce
  • 1 tbsp fresh lime zest
  • 1/2 tsp lime zest
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • pinch of sea salt

Instructions

  • Divide your ground sausage or meat of choice into 6 rounds
  • Flatten them all the way, and top them with a tortilla
  • Add to a pre-heated skillet and cook about 7 minutes, until fully browned
  • Use a paper towel to dab away any excess grease
  • Layer your smash tacos with soft scrambled eggs and toppings of choice
  • For the Creama- simply whisk everything together and taste/adjust to desired level of spiciness. Can add 1-2 tbsp water to make it thinner
  • These do reheat fine. Store the tacos in the fridge without any toppings. Reheat on a skillet for 1-2 minutes, or microwave and then top them
