Fall Harvest Fruit Salad

Ingredients

  • 2 Green Apples or Pears
  • 2 Red Apples
  • 4 Clementines or 2 Oranges
  • 1 cup Pecans
  • 3/4 cup Raisins or Dried Cranberries
  • 1 cup Grapes
  • 1/2 lemon squeezed

Dressing

  • 1/2 cup Orange Juice
  • 1/4 cup Light Golden Coconut Sugar
  • Zest from 1 lemon
  • Zest from 1 orange
  • 1/4 tsp Apple Pie Spice

Instructions

  • Make your dressing first
  • Combine ingredients together in a small sauce pan, and heat over low-medium heat until slow boil. Reduce heat to low and let simmer 3-4 minutes, stirring every minute or so
  • Strain through a fine mesh strainer, and set aside to cool
  • Toast pecans at 350 for 6-8 minutes, until you can start them
  • Core and dice apples, and toss them in lemon juice to prevent them from brownies
  • Add grapes, green apples, red apples, peeled orange slices, raisins, and toasted pecans to a serving bowl
  • Toss with cooled dressing, and enjoy!
  • Best if used within 1-2 days
  • Keep leftovers stored in the fridge
