Frosted Pop-Tart Cookies

Gluten free, refined sugar free, soft and sweet strawberry pop-tart cookies! Can easily be made with cherry, blueberry, or any of your favorite pop tart flavors.

Ingredients

  • 2 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 1/4 tsp Baking Soda
  • 1/4 tsp Sea Salt
  • 6 Tbsp Honey
  • 1/4 cup Butter Unsalted, Or vegan butter stick
  • 1 whole Egg
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp Almond Extract
  • Filling
  • 1/2 cup Strawberry Superfood Jam - Smash Foods
  • Frosting
  • 3/4 cup Powdered Monkfruit Sweetener - Lakanto
  • 2 - 3 Tbsp Almond Milk
  • 1/2 tsp Pure Vanilla Extract

Instructions

  • Make cookie dough whisk dry ingredients together in one bowl
  • Use a hand mixer to whip honey and softened butter together, then add add and vanilla and whip again
  • Add in dry ingredients with a wooden spoon
  • Wrap the dough in plastic wrap in a disc shape and refrigerate for an hour
  • Use 2 circular cookie cutters, one slightly larger than the other, to create cookie shapes, re-gather and roll the dough until all dough is used
  • Place the smaller cookies on a baking sheet, and place one tbsp of jam in the center of the cookies
  • Place the larger cookie overtop and seal the edges with your fingers
  • Bake at 350 for 11-12 min. After 5 min move to a cooling rack to continue cooling & crisp up a bit
  • Make icing by whisking powdered sugar and milk of choice together until desired consistency and use natural sprinkles on top (go super natural brand pictured)
  • Spread overtop cooled cookies and allow icing to set
  • Enjoy!
