First make your caramel layer, as you're going to let it freeze. This allows it to stay present in the center of your brownies, with it dissolving into the brownie batter itself.
Whisk all caramel ingredients together until smooth, then pour into 8x8 dish lined with parchment paper, and freeze at least 30 minutes
Meanwhile, make your brownie batter
Whisk all of your wet ingredients together, then fold in your dry
Fold in your chocolate chips
Remove your caramel from the freezer, and place new parchment paper in an 8x8 baking dish for your brownies
Pour half the brownie batter in the pan and spread.
Then add your firm caramel layer, and drizzle remaining brownie batter on top.
Sprinkle with the top with caramel chips
Bake at 325 for 33-38 minutes, until no longer gooey in the center
Now, for clean slicing, you need the caramel to firm back up, which it will when the coconut oil or butter are no longer at melting temperature
Allow to cool at room temp for 1 hour, then place in the fridge for 2 hours (overnight is fine)
Slice into 16 squares, and enjoy!
