Healthy Copycat Star Crunch Cookies (Gluten‑Free, Dairy‑Free & Refined Sugar‑Free)

Ingredients

  • 3/4 cup dark chocolate no sugar added
  • 6 tbsp creamy peanut butter
  • 3 tbsp pure maple syrup
  • 1 tbsp coconut oil
  • 2 cups one degree organics brown rice cereal

Caramel filling

  • 1/3 cup creamy cashew butter or peanut butter or mix of both
  • 2 1/2 tbsp pure maple syrup
  • 1 tbsp coconut oil melted
  • 1 heaping scoop collagen optional- dissolves right in and adds gooeyness to the caramel
  • 1/2 tsp vanilla extract

Instructions

  • Make caramel by whisking everything together until gooey
  • Dollop quarter sized circles onto parchment paper and freeze for 15-20 min
  • Combine all ingredients together for chocolate crunchy coating, minus the cereal, and melt until smooth-microwave or on stove top
  • Add in cereal and combine until coated Spoon a small scoop onto a parchment paper lined baking sheet, and flatten
  • Remove your frozen caramel circles and place them on top
  • Then top with more of your chocolate crunch mixture
  • Use a circular cookie cutter to shape them, then press down to flatten Place in the fridge to harden- at least an hour
  • Enjoy!!
