High‑Protein Chocolate Mousse Cups

Ingredients

  • 16 oz Cottage Cheese
  • 1 Tbsp Cocoa Powder
  • 1/3 cup Chocolate Protein Powder
  • 1/4 cup Creamy Peanut Butter Or almond butter or a hazelnut butter for pure chocolate flavor
  • 3 - 4 Tbsp Medjool Date Syrup Or maple
  • 3 Tbsp Double Chocolate Crunchy Cookies Crushed, I used Simple Mills brand
  • 4 whole Strawberries
  • 1/3 cup organic white chocolate
  • Pinch natural colorant orange

Instructions

  • Blend mousse ingredients together until smooth, scraping the sides as needed
  • Pour into 4 individual cups / jars and refrigerate 1hr + for optimal taste & texture
  • For Easter topping: Crush some chocolate cookies of choice
  • Melt white chocolate, add natural orange colorant like Color Kitchen Foods brand, dip strawberries and set on parchment paper to harden
  • Assemble mousse cups by topping with cookie crumbles as the "diet" and orange strawberries as the "carrot"
  • Enjoy!
  • Keep stored in the fridge, covered, for up to 4-5 days without toppings
