High Protein Queso Dip - Healthy 10 Minute Recipe

Ingredients

  • 1/2 lb lean ground beef
  • 2 cups cottage cheese - 2% or 4%
  • 1/2 cup pepper jack cheeese
  • 1/2 cup Mexican cheese blend or cheddar
  • 2 tbsp taco seasoning - I like Siete brand
  • 4 oz diced green chilis 1 can
  • 1/4 cup water

Instructions

  • Cook ground beef, drain, and set aside
  • Blend cottage cheese, shredded cheese, taco seasoning, and water until smooth
  • Pour into a large bowl and microwave in 30 second intervals for 1 1/2-2 minutes total until cheese is melted
  • Add ground beef and diced chilis and stir to combine
  • Serve right away with chopped bell peppers, tortilla chips, corn dippers, etc
  • Keep stored in the fridge and reheat prior to enjoying
