Prep Time: 10 minutes
Cook Time: 10 minutes
Servings: 20

Ingredients

  • 1 1/4 cups almond flour
  • 1/2 cup tapioca flour
  • 1/4 cup black cocoa powder
  • 2 tbsp melted coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Frosting

  • 1 cup Miss Jones Organic Vanilla Frosting
  • 1 Color Kitchen Foods Dye-Free Color Sachet in green, purple, & orange

Instructions

  • Add all of your cookie ingredients to a large bowl and use a hand or stand mixer to combine the dough. Alternatively, add everything to a food processor to incorporate
  • Place dough onto parchment paper, place another piece of parchment on top, and roll dough out to 1/4 inch thickness
  • Use a small cookie cutter to get even cookies, and move shaped cookies onto a baking sheet lined with parchment paper. The cookies won't spread, so no need to leave much spacing
  • Roll the excess dough back up and out again, and repeat until you've made cookies out of all the dough. I got 40 single cookies total
  • Bake at 350 for 10 min
  • Allow to cool completely
  • Gather 3 bowls
  • Add half of each color satchet along with 1/2 tsp water to each bowl, until colorant has dissolved
  • Add roughly 1/3 cup pre-made vanilla frosting to each of the three colored bowls and whisk / use a hand mixer until icing is smooth, fluffy, and color is vibrant and fully incorporated
  • Place each colored icing into a piping bag, and pipe onto the center of half the cookies
  • Place remaining cookies on top and press down slightly
  • You can now add your candy eyes if using (see homemade candy eye instructions in the post above)
  • Enjoy as is, or refrigerate for firm cream filling
