Ingredients

Almond Flour

Oat Flour

Cacao Powder
Raw

Coconut Oil
Melted and cooled

Pure Maple Syrup

Vanilla Frosting - Simple Mills

Artificial Dye-Free Food Coloring

Instructions
Combine your dry ingredients together, then combine wet in a separate bowl
Pour wet into dry until dough forms
Place in fridge for 15 minutes
Roll dough btwn 2 pieces of parchment paper, then take a small oreo-size cookie cutter to create your cookies. I got 26 (13 oreo cookie sandwiches)
Place on parchment paper and bake at 350 for 7-8 minutes
Allow to cool on baking sheet then place on cooling rack until cool to touch
I used Miss Jones organic vanilla icing with natural green dye, piped on half of the cookies
Place cookie sandwiches in the fridge until frosting has set
Enjoy!
Notes
Again, these are only green to coordinate with st Patrick's day. Feel free to omit the natural dye or make them any color you wish!
