Homemade Oreos (Gluten and dairy free)

Ingredients

  • 1/2 cup Almond Flour
  • 1/2 cup Oat Flour
  • 1/2 cup Cacao Powder Raw
  • 5 Tbsp Coconut Sugar
  • 1 tsp Baking Powder
  • 1 pinch Sea Salt
  • 1 whole Egg
  • 5 Tbsp Coconut Oil Melted and cooled
  • 3 Tbsp Pure Maple Syrup
  • 1/2 cup Vanilla Frosting - Simple Mills
  • 1 pinch Artificial Dye-Free Food Coloring Colorkitchenfoods brand green

Instructions

  • Combine your dry ingredients together, then combine wet in a separate bowl
  • Pour wet into dry until dough forms
  • Place in fridge for 15 minutes
  • Roll dough btwn 2 pieces of parchment paper, then take a small oreo-size cookie cutter to create your cookies. I got 26 (13 oreo cookie sandwiches)
  • Place on parchment paper and bake at 350 for 7-8 minutes
  • Allow to cool on baking sheet then place on cooling rack until cool to touch
  • I used Miss Jones organic vanilla icing with natural green dye, piped on half of the cookies
  • Place cookie sandwiches in the fridge until frosting has set
  • Enjoy!

Notes

Again, these are only green to coordinate with st Patrick's day. Feel free to omit the natural dye or make them any color you wish!
