No Bake Brookie Protein Bars

Ingredients

Brownie layer

  • 3/4 cup cocoa powder
  • 3 scoops chocolate protein powder
  • 1/2 cup almond flour
  • 1/2 cup pure maple syrup
  • 3 tbsp almond butter
  • 3 tbsp almond milk
  • 1 tsp vanilla extract
  • Pinch of sea salt

Cookie dough layer

  • 6 medjool dates
  • 1/4 cup almond butter
  • 1/4 cup oat flour
  • 2 scoops vanilla protein powder
  • 1 tbsp pure maple syrup
  • 2-3 tbsp mini chocolate chips

Instructions

  • stir together brownie ingredients in a bowl and set aside
  • Place dates in a small container with hot or boiling water for 10 min
  • Blend the rest of the ingredients except chocolate chips in the blender
  • If crumbly add the syrup. If too sticky add 1-2 tbsp more oat flour (just depends how much moisture your dates hold)
  • Mix in chocolate chips.
  • Both brownie & cookie dough will be slightly sticky
  • Spray a spatula with non stick spray or coconut oil
  • Press brownie & cookie dough mixture into a loaf pan
  • Place in freezer for 20 min
  • Slice into squares, and enjoy!
  • Store in fridge
