No‑Bake Cosmic Brownie Protein Bars (Gluten‑Free, Dairy‑Free, Dye‑Free)

Instructions

  • Mix together bar ingredients until dough like texture is achieved
  • If the mixture feels dry ass 1 tbsp melted coconut oil, or 1 tbsp more liquid sweetener
  • Press down into a 9x5 loaf tin lined with parchment paper and refrigerate
  • Meanwhile, make the ganache
  • Melt your chocolate in 30 second intervals, stirring in between
  • Add in peanut butter OR coconut cream (both versions for a silky smooth ganache) and fold until smooth
  • Pour and spread overtop your bars, and sprinkle colorful chocolate candies on top
  • Refrigerate 1 hour, or until ganahce is firm
  • Slice into bars, or into smaller squares and enjoy!
  • Store leftovers in an air tight container in the fridge for up to 5-6 days, or in the freezer for up to 3 months
