Peanut Butter Protein Mousse

Ingredients

Mousse

  • 16 oz Cottage Cheese
  • 1/4 cup Creamy Peanut Butter
  • 3 Tbsp Pure Maple Syrup
  • 1/3 cup Vanilla Protein Powder Optional, or peanut butter protein powder
  • 2 Tbsp Collagen
  • 1/2 tsp Vanilla Extract
  • 1 pinch Sea Salt

Ganache

  • 1/4 cup 70% Cacao Organic Vegan Bitter-Sweet Dark Chocolate Chips with Organic Stevia - Pascha Chocolate Co.
  • 2 Tbsp Coconut Cream *

Instructions

  • Blend together mousse ingredients until smooth
  • You can optionally add in protein powder for more protein and/or flaxseed or hemp hearts for more omega 3 fatty acids
  • Pour into 4-5 glass jars
  • Melt your chocolate chips in 30 second intervals
  • Allow to cool, then stir in coconut cream until creamy.
  • *can also use 3tbsp peanut butter + 3 tbsp chocolate chips melted together for ganache
  • Pour ganache overtop your mousse, sprinkle with peanuts and sea salt salt
  • Refrigerate for 30 min+ and enjoy!
  • Will store well covered in the fridge for 3-4 days
