Protein Packed Blueberry Lemon Mousse

Instructions

  • Blend all ingredients together until smooth
  • Pour into 3 jars and refrigerate at least 2 hours, or overnight for ultimate thickness
  • Make whipped cream by chilling a mixing bowl, then adding all ingredients together and whip using a stand or hand electric mixer.
  • It will take about 6-8 minutes to thicken to whipped cream
  • Place in piping bag if desired
  • Top mousse with homemade whipped cream topping and freeze dried blueberries, lemon zest, and / or fresh blueberries, and enjoy!

Notes

You will have extra whipped cream leftover for another treat! Store in an airtight container in the fridge, and give a 30-60 second whip before enjoying on the next treat
The lemon protein is a delicious one for sure! I love it in a shake, this recipe, and in my Blueberry Lemon Perfect Bars, too! 
You can sub vanilla protein powder though, and up the lemon zest a bit for a stronger lemon flavor!
