Pumpkin Cheesecake Mousse

Ingredients

  • 1 1/2 cups Heavy Whipping Cream *
  • 6 Tbsp Confectioners Sugar Powdered - Swerve
  • 1 1/2 tsp Pure Vanilla Extract
  • 5 oz Cream Cheese Full Fat
  • 3/4 cup Pumpkin Purée
  • 1/2 cup Confectioners Sugar Powdered - Swerve, *
  • 1/2 tsp Cinnamon Ground
  • 1 1/4 cups Graham Crackers Crushed

Instructions

  • Use a hand mixer or stand mixer to beat cream, your first 6 tbsp powdered sugar, and vanilla until soft peaks form
  • In a separate bowl, beat cream cheese, pumpkin puree, 1/2 cup powdered sugar, & cinnamon until smooth and combined. Fold 1/3 cup of whipped cream into pumpkin mixture.
  • Layer the crushed grahams, pumpkin cream, and whipped cream
  • Enjoy!
