6cupsNo Sugar Added LemonadeI like Uncle Matt's brand
1cupPrebiotic SodaLike Olipop brand, or sparkling water
To garnish
Mint leaves
Lemon slices
Fresh blueberries
Instructions
First, make your blueberry simple syrup. You can do this ahead of time, as it will need to cool completely before you make your lemonade
Bring 1 cup filtered water & 3/4 cup granular monkfruit (or organic cane sugar or honey) together on the stovetop over medium heat
Once boiling, add 1 cup blueberries, and give it 5 more minutes, stirring every minute or two, for the blueberries to release their juices
Strain through a fine mesh strainer into a jar and set aside to cool
At this point, you can store your homemade simple syrup in the fridge in an airtight container for up to 3 months
Once your syrup is cool, pour into the bottom of a glass, add ice, then your no sugar added lemonade, a handful of blueberries, and top with your prebiotic soda or sparkling water
Garnish with fresh lemon and mint and enjoy!

The homemade blueberry simple syrup is enough for about 6 drinks. You can absolutely make this for just 1 or 2 and save the syrup for another day!
