Strawberry Shortcake Cottage Cheese Mousse

Ingredients

Mousse

  • 16 oz Cottage Cheese
  • 1/4 cup Cashew Butter
  • 3 Tbsp Pure Maple Syrup
  • 1/3 cup Strawberry Protein Powder - Nuzest *
  • 1 tsp Pure Vanilla Extract

Whipped cream

  • 3/4 cup Heavy Whipping Cream
  • 1/4 cup Vanilla Protein Powder
  • 1/4 cup Powdered Monkfruit Sweetener - Lakanto Or organic powdered sugar
  • 1 - 2 Tbsp Arrowroot Flour
  • 1 tsp Pure Vanilla Extract

Instructions

  • Blend cottage cheese ingredients together until smooth, scraping the sides as needed
  • If you don't have strawberry protein powder you can use French vanilla and add 3-4 tbsp freeze dried strawberries
  • Pour into glass jars are refrigerate. Can eat right away, but it thickens and gets even more delicious as it sits in the fridge a couple hours (overnight is fine also)
  • If using whipped cream- chill a mixing bowl, then add heavy cream, protein, and powdered sugar and whip until smooth
  • If using monkfruit instead of powdered sugar you'll want to add 1-2 tbsp arrowroot flour to help thicken it
  • Keep whipping until whipped cream texture achieved (5-7minutes)
  • Pipe onto mousse and top with crushed vanilla cookies and freeE dried strawberries
  • Enjoy!
  • You will have extra whipped cream. Feel free to half the recipe. I use the homemade whipped cream regularly for treats!
