Ingredients

  • 1 lb ground chicken
  • ½ cup sweet chili sauce
  • 1 tbsp soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1 –2 tsp sriracha optional for heat
  • 1 tsp garlic powder
  • ½ tsp ginger powder or 1 tsp fresh grated
  • ½ tsp salt
  • 1 –2 tbsp water to thin if needed

Sesame‑Lime Slaw

  • 2 cups shredded cabbage
  • 1 large carrot shredded
  • 2 green onions sliced
  • cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1 tsp honey
  • ½ tsp garlic powder
  • Pinch of salt

For Serving

  • Butter lettuce or romaine leaves
  • Sesame seeds
  • Extra lime wedges
  • Cilantro

Instructions

Make the Slaw

  • In a bowl, whisk together Greek yogurt, lime juice, sesame oil, honey, garlic powder, and salt.
  • Add cabbage, carrot, and green onion.
  • Toss until coated and chill while you cook the chicken.

Cook the Chicken

  • Heat a skillet over medium‑high.
  • Add ground chicken and cook until browned.
  • Stir in sweet chili sauce, soy sauce, rice vinegar, sriracha (if using), garlic powder, ginger, and salt.
  • Add a splash of water if needed to create a glossy, sticky sauce.
  • Simmer 2–3 minutes until thickened.

Assemble

  • Spoon sweet chili chicken into lettuce cups.
  • Top with sesame‑lime slaw.
  • Finish with sesame seeds, cilantro, peanuts, and a squeeze of lime.
