  • Organic cane sugar, or honey – see notes
  • Vanilla protein powder – optional
  • Water
  • Vanilla extract
  • All natural orange colorant
  • Arrowroot Flour
  • Dark Chocolate

How to Make Healthy Ghost Marshmallows

  • Add 1/2 cup water and 2 tbsp gelatin to a large mixing bowl and whisk; your stand mixer bowl if you’ll be using one
  • In a small saucepan add sweetener- honey or cane sugar, and remaining 1/2 cup water
  • Heat over low-med heat until temp reaches 238-240 degrees F. This takes about 5-8minutes. Stir regularly
  • Once your reach that temperature, pour into the gelatin bloom and whip for about 5 minutes, until mixture is white and fluffy
  • Add your vanilla protein powder and vanilla extract and whip another minute until thick and it holds a peak
  • Pour into 9×9 baking pan lightly dusted with arrowroot flour
  • Add a few drops of your orange colorant dissolved in a tiny pinch of water, then use a toothpick or cake pop stick to gently swirl, for that ombre affect
  • Place in the fridge to set for 2 hours
  • Use a butter knife to loosen the edges, then remove from pan and onto a cutting board.
  • Dust your ghost mold with arrowroot and cut our your ghosts
  • Use a cake pop stick dipped in melted chocolate to make your ghost face
  • Enjoy!

Notes

If using honey I do recommend the vanilla protein, to up the dry ingredients a bit. Otherwise, set for at least 4 hours, or overnight, or marshmallows aren’t tacky.
If using cane sugar you can use or omit the vanilla protein powder
